New food product development “Concepting to implementation of ‘Roejak Mochi’

Food and beverages business is one of the biggest industry you can find in Indonesia, especially it is well known for its traditional food and beverage. You can find a lot of restaurant and street food in many places in the city. People also get excited when they found out a new food product and urging to try one. Because of that reason, the author wants to innovate and develop his new product.
"Roejak Mochi" is the new product invented from the fusion idea from mochi cake from Japan and 'Rujak Buah' (Indonesian Fruit Salad) from indonesia. It is an innovative idea because the product is not yet existed around Indonesia. The author is targeting the millenials and gen-z in Surabaya, East Java, Indonesia because the product considered as a modern innovation eventhough the basis is from traditional snacks.
To perfect the product, the author is doing focus group of 10 people and giving the a questionare for the product's feedback about the taste, aroma, appearance, and so on.
To conclude all, the author used mixed method for the study. The focus group gave the results of that the product needs to be improved in portion, the sauce, and the mochi dough.
