Developing a better system for beverage inventory list in the Oriental Swan Restaurant

The thesis is written as the final part of the B. Sc. Hotel Management in order
to examine, to develop drink inventory list of "The Oriental Swan" by making new
drink inventory list in the F&B Management.
The first part of this thesis will introduce about the history of "The Oriental
Swan" Restaurant. "The Oriental Swan" is a Chinese restaurant, which is located in
Rademakerstraat 2, Soesterberg, Netherlands. And which kind of drink inventory lists
that can be arrange for the restaurant.
The second part of this thesis is a qualitative research, which is started by
reviewing the literature. The literature review show how to arrange the drink, how to
keep the drink and the process of beverage. The process starts from purchasing,
receiving and storing.
From the literature study of this thesis and based on the research problem, the
next part of the research concerns a case study. The case study based on the literature
reviews, in depth interviews with the owner, supervisor, colleges and observations in
the bar of the restaurant.
